Turkey Day with Billy Ray Featured Recipes

We asked all you fans of Billy Ray Cyrus to share your favorite Thanksgiving recipes for a chance to have yours featured in our on air special "Turkey Day With Billy Ray". Here are the featured fan recipes and a couple bonus recipes from Billy's mom and our good friend Loretta Lynn!

MOM'S THANKSGIVING DRESSING


1 bag croutons
1 pan of cornbread
4 stalks of celery
2 white onions
1 cube butter
1 cup toasted pecans chopped
3/4 cup dried cranberries - plumped by sitting 5 minutes in boiling water
1 cup of chopped parsley
Sage, pepper, salt to taste
Chicken broth - large can
Pieces of turkey meat pulled from bone (Boiled earlier until done and cooled)

Sauté onions and celery in cube of butter. In large bowl add croutons and broken pieces of cornbread and turkey meat pieces. Add seasonings such as salt, pepper, sage, thyme according to personal preference and mix. Pour in sautéed celery, onion and butter. Fold gently. Stir in pecans, drained cranberries and parsley. Slowly add chicken broth until dressing is good and moist, not soupy. Place in casserole dish and cover. Bake at 350 for 45 minutes to an hour. Remove cover last 15 minutes for a crisper crust. Enjoy!

CORN SALAD


1 large aluminum, throw away, loaf pan
As many cans of White shoepeg Corn that will fit in the pan, drained
1/2 Sour Cream and 1/2 mayonnaise, enough to spread through the corn
1 jar of pimentos, drained
Small handful of fresh green onions, chopped

Mix it all together and let it chill. It's even better the second day!

HOT CRAB DIP


1/4 cup mayonnaise
8 oz. cream cheese
2 tbsp milk
7 1/2 oz. lump crab meat
1 small onion (grated)
Dash hot sauce, salt and pepper.

Mix all ingredients well.

Spray Pyrex dish with cooking spray before pouring mixture in it, and bake at 325 degrees until bubbly. Serve with your favorite crackers while hot (be careful not to burn your mouth).

CRANBERRY SALAD


1 lb. fresh cranberries, ground
2 large apples, seeded and chopped
2 large oranges, peeled and cut-up
1 cup pecans, chopped
1-8 oz can crushed pineapple
Juice of 1 lemon
Mix everything together, cover and refrigerate 24 hours

POTATO SALAD


9 or 10 medium Idaho potatoes
8 boiled eggs
Add to taste: diced onions, celery, olives, sweet pickles, 1 bell pepper

Optional ingredients: cucumber, Cajun salt, salt and pepper, Jalapeno pepper, dash of garlic powder

Mix with 1/2 cup salad dressing, 1 tablespoon mustard and/or Ranch Bacon Dressing

CHICKEN & DUMPLINS


Chicken
1 large fat hen, skinned
3 garlic cloves, crushed
Salt and pepper

Dumplins
3 cups self-rising flour
1 teaspoon salt
1 cup water
1 egg, beaten
6 to 8 cups, chicken broth
1/2 cup cream

1 tablespoon of cornstarch (optional)

In a large pot boil the hen with garlic in water for 2 hours. Add additional water as needed. Drain the hen, reserving broth. Cut into pieces and discard the bones.
For the dumplins, in a large bowl, sift together flour and salt. Gradually add water. Stir in egg. Knead dough thoroughly, roll onto floured surface. Cut dough into strips. Bring chicken broth to a boil and drop dough into boiling broth. Cover, simmer 10 minutes. Add cream, chicken pieces and simmer for 5 to 10 minutes longer. Add 1 tablespoon of cornstarch to thicken if needed.
