JT salivates just talking about his wife's carrot coconut cookies. "They are incredible," he says, "and they're always soft."
For the cookies: Mix shortening, margarine, sugar, eggs, carrots and almond extract together. Blend in flour, baking powder and salt. Add coconut. Drop dough by the teaspoonful about 2 in apart onto lightly greased cookie sheet. Bake 8-10 minuntes @ 400 degrees. Immediately remove from cookie sheet.
For the icing: Beat all ingredients together until smooth. Frost when cookies are completely cool.
